Drive to Kairouan, one of Islam's holiest cities. Visit the Aghlabid Basins, among the great hydraulic works of the Muslim world, and the Great Mosque, founded in 670, then wander the narrow streets of the old medina — tasting the local makroud pastry and visiting its renowned carpet-weaving workshops.

Settle into your tented camp for sunset, and watch crisp sand bread baked under the embers before dinner.

Wake early for sunrise over the dunes, then venture off the beaten track to Guermessa, hiking with your guide past its mosque and granaries for sweeping panoramas. Continue to the inhabited Berber village of Chenini for a guided visit and a local lunch, then trek on to Douiret through oases and olive groves, meeting shepherds along the way, for dinner and an overnight in a guesthouse.

Drive to Matmata via the Berber village of Tamazret for a coffee break. In Matmata, you are welcomed into a local home with tea and freshly baked bread, olive oil and honey, and visit the famous Hôtel Sidi Driss film location and the village of Toujane, known for its margoum carpets. Continue to El Jem to tour its great amphitheatre and museum before reaching Sousse, the pearl of the Sahel, for the night.
